Hot Potato Ham Casserole

The best part is that it’s very versatile, replace cheddar with swiss, replace ham with chicken. With this recipe, they will all work beautifully!

Casserole Shell

  • 3 Medium Russet Potatoes Thinly Sliced
  • 1/4 Cup Parmesan cheese Finely Shredded

Casserole Filling

  • 1 Cup Ham Cubed
  • 1 Cup Carrots Cubed
  • 1 Cup Sweet Corn
  • 1 Cup Green Pepper Chopped
  • 1 Cup Cauliflower Chopped
  • 1 Medium Onion Thinly Sliced Rings
  • 1/4 Cup Parsley Minced
  • 1 Clove Garlic Minced
  • 1 Tablespoon Hoisin Sauce
  • 1/8 Teaspoon Black Pepper Ground
  • 1/8 Teaspoon Rosemary Crushed
  • 1/8 Teaspoon Sriracha Seasoning
  • 1/8 Teaspoon Lemon Peel Grated
  • 1/8 Teaspoon Mrs Dash Onion & Herb Seasoning
  • 1/3 Cup All-Purpose Flour
  • 1 3/4 Cup Milk
  • 1/2 Cup Cheddar Cheese Shredded

Casserole Topping

  • 1 Cup Cheddar Cheese Shredded
  • 1/4 Cup Parmesan cheese Finely Shredded


  • Preheat the oven to 350° Fahrenheit
  • Slice potatoes into thin slices. Grease a 9 x 12 casserole dish and line bottom and sides with potato slices. Sprinkle with a light coat of parmesan cheese. Place in oven to cook as you prepare the filling.
  • Mix all the Casserole Filling ingredients into a pot and heat until carrots are tender. Mix the milk and flower together until smooth and add to pot. Heat until filling thickens up and remove from heat.
  • Remove potatoes from oven and scoop filling into the casserole dish. Top with cheddar cheese and then parmesan cheese. Return to oven and cook an additional 15 minutes or until cheese is bubbling.
  • Remove from oven and let cool for 10 minutes before serving.
